Tahini-love


(Chickpea ‘Blondies’)

I feel a certain calmness these days that I haven’t felt in a long while. Is it that the air seems crisper and fresher? I’ll admit, I’m more aware these days that I’m getting older. I’ve adopted that sing-song voice when I talk to friends’ kids. The guy behind the counter at the local liquor store has long since forgotten to ask me for ID. Face cream, not ice-cream, is now an important daily ritual.

Of course, I still love ice-cream, but am becoming increasingly conscious of the need to eat healthily. My heart still beats faster for butter but I’ve also found new things to be excited about. Not forgetting my foray into the world of black bean brownies, I’ve become equally excited about Celine’s chickpea ‘blondies’. The fact that a combination as unusual as strawberry jam, tahini and chickpeas can be delicious and as an added bonus, healthy and vegan, is what I find so interesting.


(Tofu salad with sesame sauce)

In the spirit of the vegan recipes and wholesome eating, I’m including a beautiful vegan-friendly tofu and sesame dish, adapted from a chicken recipe by Harumi Kurihara from her book, Harumi’s Japanese Cooking. I’m a big fan of cucumber, and happily eat it with most things (especially in sandwiches). If you happen to dislike cucumber, you can easily replace it with any other vegetable, such as shredded cabbage, carrot, beansprouts etc. This dish is wonderful as an appetiser, or can be served with rice or soba noodles as the main event.

Tofu salad with sesame sauce :
(serves 4, or 2 hungry people)

50g spring onion (scallions), finely shredded
200g cucumber (or a mixture of your favourite vegetables)
250g firm tofu, cut into strips or cubes
50g green beans, blanched and refreshed
1/4 bunch coriander, leaves picked and roughly chopped or torn

for the sesame sauce :
1/4 cup (50ml) chicken stock
1/2 teaspoon sesame oil
4 tablespoons tahini
2 tablespoons soy sauce
2 tablespoons caster sugar
1/2 tablespoon rice vinegar
1 tablespoon sesame seeds, lightly toasted
1 small red chilli, finely chopped
2 teaspoons ginger, finely chopped
2 teaspoons garlic, finely chopped

Cut the cucumber in half, remove the seeds with a spoon, and slice the remaining flesh into batons. Combine the cucumber and remaining ingredients in a bowl.

Mix all the ingredients for the sesame sauce in a separate bowl, the pour it over the tofu and cucumber. Toss well, adjust the seasoning with salt and pepper, and serve.

An ode : Green tea and white chocolate cake, summer fruits, sesame nougatine

She is black. Pastel polka dots all over her body like a clown disguised as a leopard. Sweetness and joy, with a killer heel.

Every girl has her favourite pair of shoes. They are the ones that make her feel like a million dollars, whether she’s in jeans or a cocktail dress. The ones in which she clicks down the street proudly, feeling strong yet vulnerable. The ones that cost too many clams to obtain, but which have paid back in emotional dividends too complicated to calculate.

Yes, every girl has her favourite pair of shoes. This is an ode to mine.

Cheddar Biscuits for a New Year

A beautiful New Year’s Day. An opportune moment to rediscover the art of couch-potato-ing, and the perfect time for recovery. Not from the excesses of the night before, but from lack of sleep, due to the fire alarms going off at 4-5 o’clock throughout the whole of our apartment building this early morning. It’s cause remains a mystery still. All I know is that one alarm went off, and the other felt lonely so it started screeching too. Just like a koel.

Foggy mind notwithstanding, you can’t possibly go wrong when putting together these Cheddar biscuits. The recipe comes from Baking with Passion by Dan Lepard and Richard Whittington; a cookbook from an artisanal bakery in London. I spied this book several months ago in a discount bookstore and bought it on a whim. The Benedict Bar and Oatmeal and Raisin Cookie recipes alone, have made the purchase worthwhile. These cheese biscuits, originally Parmesan (but mature Cheddar is an acceptable substitute), are delicious : crispy, buttery, lightly salty. The food processor virtually does all the necessary work and all you need to do after that is pour yourself a glass of tipple (Port, in this case, if it’s not too “last year” for your tastes).

Cheddar Biscuits:

335g plain flour
300g mature Cheddar, freshly grated
300g unsalted butter, chilled and diced
1/3 teaspoon cayenne pepper
1 1/2 teaspoons Maldon salt, ground fine
1 teaspoon coarsely ground black pepper
1-2 Tablespoons cold bottled spring water

1 egg, lightly beaten
2 Tablespoons white sesame seeds
2 Tablespoons black sesame seeds

Put the flour, freshly grated Cheddar and chilled diced butter in a food processor with the cayenne, salt and black pepper. Whiz to a crumb, then slowly add the cold water through the feeder tube until the dough forms into a ball.

Scrape out on to a lightly floured surface and roll into a cylinder. You will cut the biscuits from this, so size the roll accordingly. Cling-wrap tightly and refrigerate for at least 4 hours or overnight.

Brush the cylinder with beaten egg and roll in the mixed sesame seeds to coat all over. Wrap and chill for a further hour.

Preheat the oven to 180’C. Cut the cylinder into 5mm slices and lay these on non-stick baking trays, leaving at least 2cm space around them. Bake for 20-25 minutes or until golden brown. Transfer to a wire rack to cool.
